Description
Whole dry chillies have an intense, concentrated heat with complex earthy, smoky, and slightly fruity undertones that develop through the drying process. In Indian cuisine, they’re essential for tempering (tadka), where they’re fried in oil to release their aromatic compounds and add depth to dals, curries, and rice dishes. Cape Malay cooking incorporates whole dry chillies into spice blends and slow-cooked curries like bredie and bobotie, where they infuse the dish with warmth without overwhelming the delicate balance of sweet spices like cinnamon and cardamom.
