Black mustard seeds have a pungent, sharp, and slightly bitter taste that intensifies when raw, but when fried or toasted in oil or ghee, they develop a nutty, mild, and aromatic flavour. Their initial intense pungency can produce a sinus-clearing sensation similar to wasabi or horseradish. In Indian cuisine, they are primarily used for tempering—fried in hot oil at the start of cooking to release their aroma and flavour—and are key in dishes like curries, chutneys, sambars, and rasam. They also add texture and a distinctive flavour in pickling and spice blends such as garam masala and curry powder.
