When you see the word pasta you think of Italian cuisine.
Did you know Indian cuisine also has its own authentic pasta? Enter Serola (also known as Saroli). Serola is a small ring like pasta said to be made originally by the Kokani / Kokni community in the smaller coastal districts (Konkan Belt) of the Maharashtra State in India. The rings are made from wheat dough moulded into tiny rings on a thin stick, similar to a skewer or knitting needle. The rings are left on the stick are then sundried to preserve its shape. Once dried it simply slides off. The rings are also made in different colours for special occasions.

Serola can be cooked as either sweet or a savoury dish. The sweet dish being the more popular. Serola is braised in ghee until golden brown and then cooked with water, sugar and cardamom powder and other sweets spices to give the dish a unique sweet taste.
